This is our answer. We do it with a big, muscular Winter Ale with a notable balanced bitterness. It is dark and rich with caramel and roasted sweetness. The hints of chocolate and coffee from the malt mesh with the liquorice tones from dark muscovado sugar and the berry fruitiness of UK Bramling Cross hops to profound effect. A long, slightly warm fermentation with ale yeast produces fruity esters and a mildly warming alcohol aspect. Look out for a version which will be aged in American oak bourbon barrels where we hope the mosaic of flavours will increase even more in luxuriant complexity.
So, as we sit here in the cold Swedish winter enjoying the first fruits of our efforts in building this beautiful brewery, we can enjoy the comfort and contentment this dark Winter Ale provides.
MALTS: German Pale, Munich and Cara Malts. English Crystal and Pale Chocolate Malts.
ADDITIONS: Muscovado Sugar
HOPS: Galena (bittering), Bramling Cross (aroma)
YEAST: Brooklyn House Ale
ORIGINAL GRAVITY: 17° Plato
FOOD PAIRINGS: Braised meats, stews, ox-tail, game, dark sauces, hearty soups, desserts – especially chocolate.

Draft. An amber beer with a beige head. The aroma has notes of malt and hazelnuts. The flavor is sweet with notes of straw, malt, caramel, and butterscotch, leading to a dry finish.

Thank you Chris for sharing this bottle - Amber with off white head - Malt aroma with some caramel - Malt body with a caramel flavour and some hops to balance - Malt and hints of bitterness goes into the finish - This was good

[ As Nya Carnegiebryggeriet Primus Lux ].Clear medium to dark brown colour with a small to average, frothy - fizzy, good to fair lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, pale malt, toasted, dark malt, sweet malt, light nutty, light to moderate hoppy, grass. Flavor is moderate sweet with a average to long duration, perfumed malt, sweet malt, dark malt, muscavado sugar. Body is medium, texture is oily to watery, carbonation is soft. [20170311] 6-3-6-3-12

Flaske 750ml spandert av djoeye. Delt med ham & Rune på Nerstranda 6 Nov 16. Liten puff ved åpning. Ultramørk amber. Høyt tett skum med litt farge. Lett røykaroma. Smaken tørr. Litt sherryakrig. Mye innhold. Blir tørr etter hvert.

Bottle 75 cl. Pours a hazy, nutty brown with an off-white head. Sweet, burnt caramel in the nose, slightly nutty. Rich, malty body, a whiff of smoke, toffee and nuts with some late balancing bitterness. Really like a Winter Warmer and very joyable as such if you like sweet, potent old fashioned ales. 181116

Big cork and wire bottle, thanks to djoeye for sharing. Bubbly, one-finger thick, fawn-coloured head. Cloudy apricot body. Fair lacing. Caramel and herbal hops on the nose. Blended taste profile of dried fruits, brown malts and chocolate offset a dry bittersweet tail. Well bodied. Tasty (Session with djoeye and Finn, Tromsø 06.11.2016).

Bottle roast, iodine, light choc. Light murky, offwhite cream. Nutty, light bready and choc, medium light body. Quick finish.
