For four years, we have hauled turbid wort to and from the enchanting hill county vineyard of La Cruz de Comal in order to inoculate it in our mobile coolship with their unique composition of natural airborne yeast and bacteria. This beer, El Regalo del Comal is a blend of the resulting four, three, and one-year-old spontaneous fermentation.

ABV: 5.4%. Clear medium amber orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel - dark malt - toasted, sweet malt, pale malt, sour, wood, berries - grapes, light funk - barnyard. Flavor is moderate to light heavy sweet and light moderate acidic with a average duration, tart, berries - grapes, sour, funky, wood - barrel. Body is medium, texture is oily to watery, carbonation is soft. [20211022]

Small pour at Trail's End. Pours a clear, golden color, with a fair, frothy, white head. The nose is lime cordial, orange peel oils, light musty attic, fennel, and elderflower. A little sweet, with a funky and pleasantly tart flavor. Light body, with a light acidity and lively feel. This is a mellow and well balanced sour beer, yet complex and nuanced. Beautiful.
