Combining the perfect biscuity malt-based dessert crust we then mixed together almost 400lbs of prickly pear and guava puree for tropical flavours with aromas of zippy star fruit, bruised strawberries, and diced kiwis. We then co-pitched our lactobacillus culture alongside our house Kviek yeast strain adding in a complex acidity balanced nicely with the sweetness of lactose and exorbitant amounts of vanilla. Result is tangy, sour, and sweet with a vibrant magenta hue.
