Bottle pour at CBC Boston, 9/23/17.
Lightly-to-minimally hazy, drab brass-golden with a small, white head atop showing low retention.
Soft, floral notes mix with honey-like malts, Brett acidity and finally gain more lambic character, with light oak joining mild acetic and strong but mellow lactic acidity. Quite aromatic, though I think the saison gets mostly lost here and serves to just adulterate/water down the lambic character. Still, it's clean and enjoyable with no alcohol or flaw.
Lightly juicy in the mouth with honey-like base malts, funky fantome yeast (lots of Brett) mixing with lactic and light acetic acid. Mildly oaky, but like the Framboos, very light on any actual cognac (wouldn't pick it up blind). A bit low on the carbonation, but it's fairly engaging. Overall, pretty mild, even watery at times, but very competent and enjoyable flavors throughout.
