In honor of both its independence and its signature Tripel style, this Belgian style ale brewed with Belgian candi surgar and a combination of Ommegang, Duvel and Chouffe yeasts.

A tripel, if you will.

The unsung hero of brewing, the yeast strand dramatically influences the flavor and aroma profile of a beer. Three yeasts join here together to forge one remarkable brew.

Tap @ Black Bottle Fort Collins. Pours a clear golden orange appearance with an off white head. Herbal, kind of chewy woody, somewhat spicy bready yeasty, strange herbal aroma. Slightly candy flavored with a bit of caramel and toffee along with some herbal and grassy notes. Not a huge fan.

Keg at The Blind Tiger, NYC. Pours cloudy orange with a fine, creamy cap. Lots of bready malts in the nose, with hints of yeast and caramel. Medium to big sweet flavor with heavy, heavy doughy bread, yeast, candi sugar, caramel, a bit of overripe orange. Medium to full bodied with fine to average carbonation. Lightly warming to finish with some sticky sugars, more doughy bread and caramel, yeast. Quite sweet (it is a tripel, after all) and quite bready, but not as cloying as many of its peers and, overall, pretty drinkable.

GABF 2012, Friday. Opaque gold color. Sweet, as as tripel should be. Some complexity, which a good tripel should also have, with coriander and sweet wheat with yeast and some clove.

Sampled on draft at Zeno’s in State College PA this beer poured a dark apricot color with a medium sized foamy orange-white head that lingered and left great lacing. The aroma was musty with notes of sugar, candied dried tropical fruity and a yeasty presence. The flavor was tangy and bready with moderate tropical fruits, sugar and a musty undertone. Long tangy finish with lingering bread and tropical fruits. Full bodied. Well done.

Draft @ Sunset Grill and Tap. Snifter showed extremely cloudy yellow-orange with great retention. The aroma is candi sugar, lemon, coriander, and wheat. Flavor of yeast, floral hops/herbs, banana, and candi sugar. Medium body with average carbonation giving a lively but very drying finish. Overall this is a nice example of the style and real tasty.

On tap at Taco Mac. Pours light gold with a small, off-white head. The aroma is candi sugar, lemon, coriander, and wheat. The flavor is very sweet. The palate is light to medium, sugary and crisp. Overall, this is a nice, refreshing beer, but it is too sweet, and lacks complexity.
