à la Table is inspired by the classic Saisons of the past, meant to be shared "at the Table" with family and friends. Traditionally brewed to be low in alcohol and extremely refreshing, this inspired Saison was brewed with an airy and fluffy malt bill and fermented with wild Missouri yeast and bacteria and our house Saison blend before being aged in Missouri oak for several months and then being naturally conditioned in this bottle.

Blend #4. Hazy yellow color and tiny head. Light funkyness in the aroma. Light-bodied. Tartness, citrus, pale malts. Nice as such. TCBW 2025.

I had blend 4 but didn't feel like adding it. Doesnt come off that thin for the low ABV. Funky, earthy, rustic farmhouse feel. Fantastic body, cool beer. And now #5- tap at Side Project. Such a great beer. Sour and almost salty, not unlike a Gose at times. Such a great body, unique and flavorful. 9s.

Cellar draught, 3/28/23. Blend #3. Clear blonde, large white head, strong retention. Lovely mineral, cellar must, light beeswax, hint of crayon with light, fruity Brett and a faint touch of lacto. Crackery, rustic grains. Very aromatic, clean. Minimal oak presence. Soft, juicy, light touches of easygoing oak with stone fruit like acidity and flavors. Clean, crisp, quenching, pleasingly tart and drinkable. Great malt depth and attenuation. Very gently tart. Well this is kind of insane for 2.5%....

Bottle share at Moor Beer Vaults - Bermondsey. Pours lightly unclear yellow with a small, foamy white head. Lightly sweet with nips of acidity, lemon, wheat, Smarties candies. Light bodied with fine carbonation and massaging texture. Subtly acidic to finish, further lemony tang. Tasty stuff. Holds an impressive amount of character for the paltry ABV.
