Sushi Rice Beer brewed with Yuzu and Shiso

We love sushi, and we think ICHI Sushi in San Francisco makes some of the very best. So when Chef Tim Archuleta asked us to collaborate on a beer to celebrate the opening of their new ICHI Ni Bar, we jumped at the opportunity.
Inspired by classic Japanese rice beers, we mashed together a light base of pilsner malt, flaked rice and sushi rice from the ICHI kitchen. As long as we were in Chef Tim’s larder, we decided to integrate two of his favorite culinary ingredients: floral shiso leaf and Japanese Yuzu juice. We then layered on a delicate Citra dry-hop for a lemon/lime aroma. The result is a refreshing and light-bodied blonde ale with a delicate and uniquely Japanese-inspired aroma of yuzu and shiso.
Pair with the Omakase menu at ICHI or look for it available on draft in limited distribution around California.

Pours clear blonde , fluffy white head . Smell is a bit bitter , Yuzu . Taste is grainy , bit bitter , aromatic yuzu without any sour aspect . Pretty blank ending though

Keg at the Earl of Essex, 04/11/14. Clear golden blonde with a well appointed off white covering that retains well. Nose is spice, damp flannel, vanilla, sweet and sour notes, dumplings. Taste comprises off custard, Glucose drink, light spice, grain, seaweed. Medium bodied, fine carbonation, semi drying close. Maybe this works better with food but it didn’t do a lot for me!

Keg at the Earl of Essex - London. Pours perfecty clear yellow with a creamy, white head. Not the most inviting aroma, with mostly musty grains and hints of detergent. Medium sweet flavor with some sugary cereal, grains, ripe citrus fruits, melon gummies. Medium bodied with fine to average carbonation. Sugary finish with more gumny fruits, white grape, grain husk, grass. Not very good, really.

Draught @ Fermentoren, Århus. Pours light golden with a small white head. Aroma of light malt, grain, yeast, citrus, Yuzu, soapy notes. Flavor is malt, , yeast, grain, corn, citrus, yuzy, soapy. Thin to medium body, soft carbonation. 190914

Burnt orange appearance. Nose is malty with a touch of wood and broken dreams. Aroma is sort of musky. It finishes very clean. Sweet with juicy malt and graham cracker. Brown sugar, malted wheat and earthy hops

Tap at Capitol Beer in Sacramento, CA. Pours translucent gold with a creamy white head. Aroma seems mild citrus. Flavor is mild citrus, but there seems to be a berry note. Moves on to unfamiliar fruit. Finishes mildly fruity and decently bitter. With an unusual malt aspect.
