Was absolutely thrilled to see a collab with El Callejuela ( whom we visited for our honeymoon) but was surprised by the choice of a Manzanilla barrel - which seems to elegant and fine for a robust lambic to blend well. Anyway.. Pours an unclear blonde, no real head. Scent is intense, funky, mineral, banana, citrus. Taste is full intense, silky, minerals. Delightfull complexity. Manzanilla is far more noticeable than expected, which is a more than pleasant surprise !

Bottle at Quintessence 2022. It's got a bit of all the Manzanilla flavours in there: salty, earthy, dry. Works together well with the Lambic character. Good balance too, especially if you come from a sip of the actual Manzanilla, which was very intense. There's probably a lot you could make from this Lambic!

Dry oxidized sherry notes, funk, wheat, nutty. Medium sour. Lots of Manzanilla, quite tasty, but also slightly one dimensional. I prefer it to the wine though, which is dry and has a lot of licorice notes that didn’t carry over so much into the beer.

18/IV/22 - 75cl bottle @ Cantillon Quintessence (Brussels), BB: n/a (2022-365)

Clear orange beer, practically no head. Aroma: apples, oranges, a bit herbal, green carrots, spicy, some cinnamon notes. MF: soft carbon, medium body. Taste: a little bitter, gentle acidity, fruity, earthy, some tropical fruits, lemony, dry touch. Aftertaste: bitter, earthy, grapefruit peel, some tannins, juicy, nice acidity, clean, some tangerines. Very nice one!

From the bottle at Quintessence. Clear yellow pour with no real head. Mild vinous bouquet. There is a sourness in the front that quickly gives way to a malty sweetness. It has a lingering lemon zest and peppery bitterness. Cereal is present. Not very much carbonation.
