Our 2021 vintage of Gathering in the Woods was blended from three methode traditionelle spontaneous barrels which aged for between fourteen and twenty-two months. A combined maceration on Minnesota grown red raspberries and tart cherries for three months triggered a juicy, jammy fruit flesh tannic dryness, coupled with fresh turned earthy loam and assertive acidity. This still-fruited lambic drinks like a tart dry fruit wine and is best paired with roasted meats or a charcuterie board.
