Cette bière est une ôde aux fermentations mixtes, une déclaration d'amour aux traditions brassicoles belges à la sauce héraultaise.
La cuvée 2021 de la saison du chai est issue d'une assemblage de six de nos meilleurs tonneaux ayant accueilli les différentes bières pendant 10 mois en moyenne.
Au détail : 80% de saisons bien céréalières ensemencées avec différentes souches de levures "fermières" se marient harmonieusement à 20% de bière acide de fermentation mixte.
Résultat : une bière complexe, rustique, vineuse, dont la longueur appelle les discussions passionnées entre amis... Bonne soif !

Hazy yellow colour with no head.Aroma is mild acid spicy and dry with flavour of herbs and grass mild bitterness and dusty dry finish.

My second "keller saison" (chai means cellar in French) from BLM. Very good! Haven't had a sour saison in a few months. Very funky, loads of culture. Balanced and delectable.

750ml bottle. Opalescent, orange, pale golden colour with small, frothy, fading, white head. Funky yeasty and vinous fruity, tangy and minimally woody aroma, notes of grapes, oak, a touch of vinegar. Taste is mildly funky, sweet-ish, vinous fruity, tangy and minimally woody, notes of grapes, some oak, a touch of vinegar. Watery texture, minimally astringent palate, fine, soft, mildly prickly carbonation. Fairly complex, very homogeneous, smooth - very good.

Slightly hazy golden yellow beer with a white lacing. Aroma of tart apples and white grapes. Taste of white grapes, wood, some vanilla, some apples.

On tap at Stigbergets Fot. Hazy golden/yellow with a small head. A bit tart with oak, fruit, spices and some funk. The finish one the dry side.

Vintage 2021. Yellow, moderate hazy body, with a small head. Aroma of funk, lemon, white wine, grapes, some spices, slight vanilla. Tastes similar. Medium, slick mouthfeel, moderate carbonation. Finishes perfectly balanced, smooth and elegant, medium vinous, fruity. The balance is outstanding here, with beautiful vinous and fruity notes and characterful funk notes. Drinks so elegant, enjoyed this big time! Score: 8 / 4 / 8 / 5 / 17

Wonderful. Thankfully no chai tea. Although this is 80% saison and 20% mixed ferm, the acidity of the mixed ferm is most prominent. Not what I was looking for but it's darn good.

From 0,75l bottle at home. yellow hazy color, small white head. smells spices, stone fruits, earthy, bit herbal, subtle funk. Very nice smell. full body, soft carbonation. tastes stone fruits, earthy, grassy, spices, bit peppery, light oak, bit herbal, bit vinous. finishes lightly dry and medium sour with notes of grassy, spices and stone fruit notes. Very nice one, very nice balance
