A slow desktop or maybe a slow computer software or just slow going that makes this Pale German-style Kellerbier we brewed with our friends Resident Culture so special. We both share a moment in time: In the early 2021s on a cold winter night we formed a theory about broken windows and coined it the broken windoze theory. It was to define and measure the effect of adding Epiphany Helles malt, mashing with it, making a sweet wort with it, boiling that wort with hops, pitching yeast in it, and letting it sit there. then we krausened it and conditioned it in a beautiful 16oz brite to make it bright and to see the stars.
