Brewed with Scottish malted barley, raw wheat and rolled oats. Fermented with a new-to-us mixed culture of Brettanomyces strains which were isolated from traditional Belgian Lambic producers. Aged in tank for four months, and then packaged completely unfruited and unhopped to showcase the flavour characteristics of this mixed culture. We get super juicy, sweet and sour citrus, white peaches, pineapple, musty funk and candied tropical notes.

375 ml bottle. 2023 edition. Pours a cloudy yellow color with a small white head that soon diminishes to a fine scum. The aroma is strong with some brett funk and sour garbage pail. The taste is sour all the way-- I get soured grapes, lemons, and kumquats. The palate is medium in viscosity and the carbonation is soft. Finishes long and tart with lingering lemon zest. Overall: Decent sour if you like that sort of thing, but its a bit much for me to drink the whole bottle in a single sitting.

Tap at the Van Moll fest. This beer’s beauty lies within its simplicity ie having no additions. It’s beautifully layered and complex, incredibly well rounded, intriguin to see what the culture produced here. Lovely.

Аромат кисшлый, лимонный и ананасовый, много дрожжей, немного зернистый. Цвет полу мутный, бледно желтый, пенки вообще нету. Вкус просто нереально кислый, прямо как будто лимонной кислоты накидал на язык. Супер кислые ананасы консервированные, но лимон во главе. Терпко на языке, кисло на лице, при глотке. Прям тяжко допить даже минимальку.

Keg at Lost in Leith. Pours hazy yellow with a thin white head. Aromas of sour funk, pineapple and peach. Taste is sharp sour, fruity. Sour finish. Interesting.

Hazy yellow colour with thin head. Aroma and flavour have tropical fruit. Guava maybe. Pineapple. Nice acidity.

On tap at The Rusty Bucket, Eltham. Hazy yellow/gold pour with a white head. Nose is bitter orange, tropical fruits, peach. Taste is bitter lemon, tropical fruits, breakfast juice. Exceedingly dry. Tart fruity doo dah.

375ml bottle @Chez Sophie. Pours a misty yellow, large white head. Flavoursome hit of palate filling sourness from the off, well carbonated, spritzy bubbles, fruity floral citrus notes, perhaps a lick of sherbet. Very enjoyable.
