The Texas version of Fantôme Del Rey is a bière de coupage where old, barrel-aged beer is blended with young beer. The older component of the blend was brewed at Jester King in August of 2014 with malted barley, dark candi syrup, ground coriander, and black peppercorns. It was initially fermented in stainless steel with truffle honey, and then racked to oak for extended maturation. We brewed the younger version in November of 2015, and blended the old with the young. The blend was then 100% naturally refermented in bottles, kegs, and casks. At the time of packaging, Fantôme Del Rey was 8.8% alcohol by volume, 1.002 specific gravity, 19 IBU, and 3.6 pH.
Six years later, we're excited to release it once again.
Fantôme del Rey was brewed with Hill Country well water, Texas-grown barley and wheat malt from TexMalt, organic Fuggles hops, Belgian candi sugar, coriander, and black peppercorns. It was fermented in stainless steel with our mixed culture, then re-fermented with truffle honey. We naturally conditioned it for four months in green bottles. We hope you enjoy this project of spontaneity that originally sprang to life on a trip to visit one of our inspirations eight years ago!

750 ml bottle into signature tulip glass; Blend #1, bottled on 3/22/2016. Pours slightly hazy deep golden amber/light orange color with a 1-2 finger dense and rocky off white head with amazing retention, that reduces to a nice cap that lasts. Thick soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, and white bread dough; with lighter notes of leathery/musty funk, slight white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt notes; with great strength. Taste of big lightly tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, and white bread dough; with lighter notes of leathery/musty funk, slight white wine vinegar, and yeast/oak earthiness. Light-moderate peppery yeast/oak spiciness; light lactic tartness, wheat tang, and spice bitterness on the finish. Lingering notes of tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, white bread dough, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt flavors; with an awesome malt/tart/bitter/spiciness balance, and zero puckering/astringent flavors after the finish. Lightly increasing dryness from tart/bitter/spiciness. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, and fairly acidic/sticky/tangy/tannic balanced mouthfeel that is great. Alcohol is well hidden; a slightly increasing warmth of 8.8% after the finish. Overall this is fantastic wild saison! All around outstanding complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt flavors; very smooth and easy to drink for the ABV, with the mellowly spicy/lactic/tannic/drying finish. Awesome mix of classic JK house funk along with Fantome character; perfectly balanced spices/malts, with nice oak barrel presence. The Brett complexity is absolutely wonderful, and extremely intense on stone fruit/tropical notes. A highly enjoyable offering, and spot on style example as expected.

[ As Jester King / Fantome Del Rey ].Unclear medium orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, honey, coriander, light funky. Flavor is moderate sweet and light acidic with a long duration, wheat, honey, coriander, spicy, grapes, pale malt, yeast - funky. Body is medium, texture is oily to watery, carbonation is soft. Poured from a 750 ml bottle. Aroma has notes of candi sugar and honey. Some medium light peppercorn notes with some coriander and floral notes. Light overripe stone fruit and pear with faint hints of citrus. A touch of oak as well. Pours a hazy, dull, copper color with a medium large, thick, white head that recedes steadily to a thin film that lingers. Moderately high lacing and small legs. Flavor is moderately sweet with a light acidity that gets a bit more pronounced as it lingers in the finish. Moderate bitterness with a bit of an odd bite. Medium light honey notes with a bit of candi sugar. Moderate peppercorn notes with some lighter coriander. Light floral notes with hints of stone fruit, pear, red apple and citrus. Light oak notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, an interesting, unique beer, but not an amazing one. The honey clashes a bit with the phenolics. The phenolics are nice though as are the fruity and floral esters. Just the right amount of acidity.

750 ml bottle. Nose of candi sugar, honey, fungus, coriander, Belgian yeastiness, estery, some hay. Pretty orange-amber color. Peppery flavor, almost burning, tart, with a dry finish. Very spicy and a bit funky. Strange but fun.
