Corked bottle. Dark amber color. Cognac aroma, slightly oxidated. Malty sweet, caramelly flavor. Sherry and cognac notes. Has developed well.

750 ml bottle into signature chalice, bottled on 6/28/2012. Pours lightly hazy deep ruby brown color with a 2 finger fairly dense and fluffy light khaki head with great retention, that reduces to a small cap that lingers. Spotty foamy lacing clings on the glass, with a good amount of streaming carbonation. Aromas of big raisin, plum, fig, pear, apple, light banana, caramel, brown sugar, toast, brown bread, candi sugar, clove, pepper, herbal, floral, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast ester and dark/candi sugar maltiness; with good strength. Taste of raisin, plum, fig, pear, apple, light banana, caramel, brown sugar, toast, brown bread, candi sugar, clove, pepper, herbal, floral, and yeast earthiness. Good amount of yeast/carbonation spiciness on the finish; with lingering notes of raisin, plum, fig, pear, apple, light banana, clove, pepper, caramel, brown sugar, toast, brown bread, candi sugar, herbal, floral, and yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast ester and dark/candi sugar malt; with a great malt/yeast flavor balance and zero cloying flavors after the finish. High carbonation and medium bodied; with a very smooth, crisp, moderately prickly, and lightly slick mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent Belgian strong dark ale. All around great complexity and balance of fruity/spicy yeast and dark/candi sugar malt flavors; and extremely smooth and crisp to sip on for the ABV. A very enjoyable offering.

Bottle @ Papsø. Pours a hazy orange color with a white head. Has a sweetish malty caramel aroma with weak yeasty hints. Sweetish malty spicy yeasty caramel flavor. Has a sweetish malty spicy caramel yeasty finish.

Bottle @ Papsoe tasting. Unclear dark amber/brown with small off-white head. Aroma is malt, yeast, caramel, dark fruit and spices. Flavour is malt, yeast, caramel, dark fruits, medium sweet, spices, little plume and a little anise.

Bottle 750ml.Unclear matt medium amber colour with a small to average, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, moderate yeasty, spicy, sweet and fruity, amis seed. Flavour is moderate to heavy sweet and light to moderate bitter with a average to long duration, spicy, yeasty, anis seed. Body is medium, texture is oily, carbonation is soft. [20130315]

Bottled. A hazy dark amber beer with a huge off-white head. The aroma has notes of alcohol, dusty hops, malt, and caramel. The flavor is sweet with notes of malt, brettanomyces, wood, alcohol, caramel, and straw, leading to a dry alcoholic finish.
