Spontaneously fermented and aged in neutral French oak barrels. The beer was moved onto Damascene damsons (Styan Family Produce, Worcestershire) in tank. It remained there for 4 months with punch-downs performed during the initial stages of refermentation. The beer was then blended back with further components before bottling.

MBCC. Hazy red with a white head. Aroma is sweet, malty, cherry, plum and tart. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 060523

Tap. Deep red color with pinkish head. Aroma is plums, cherries, leather, super fruity. Taste is the same, good leather funk, fruity, tannins in the back. Silky mouthfeel, sparkly carbonation. Very good!

During MBCC 2023 Saturday afternoon session with Matt, Brian, Ryan, Phill, Erik, along with superhelpful, bossy, funny, and sarcastic Rachel, hehe. Aroma: nice berries and farmhouse notes. Taste: same, a bit acidic. Overall: ok.

Bottle shared at Bourne. Deep red colour with a pinkish head. Aroma and tart are dry fruity. And tart fruity plum. Medium body.

Keg at Beer Merchants Tap - Hackney Wick. Pours mostly clear ruby-red with a small, creamy pink head. Lightly sweet, semi-sharp acidity, dry, cherry, plum, vanilla. Light to medium bodied with spritzy carbonation. Tart, drying and quenching finish, more cherry, raspberry, plum, lemon. Quite enjoyable.
