Today we're releasing Urban Mutation, our collaboration with Other Half Brewing Company in Brooklyn, New York!
It was brewed with Trinity well water, TexMalt Llano pilsner and Denton County wheat, flaked oats, organic Perle hops, and Texas wildflower honey. We added more wildflower honey to the fermentation, along with a dry hop of New Zealand Motueka and Rakau. Unfiltered, unpasteurized, naturally conditioned.

750 ml bottle. Aroma is citrusy—grapefruit, lemon—peppery, funky, floral, crackery, dusty basement, wood. Pours hazy golden with a one+ finger bone-white head with decent retention. Taste has a light tartness, light building to moderate hoppy bitterness, and light sweetness, finishing dry. Alcohol is apparent. Foamy mouthfeel.

From tap at Other Half, New York. Aroma is tart fruits with white grapes, some peach and citrus, oak, some funk, apples, malt, soft honey, hint of vanilla. Flavour is medium acidic sourness with a little sweetness. Body is medium. Deceptive drinkability for a 10%. Really nice.

750mL bottle, pours a clear golden blonde with a medium white head. Aroma brings out fermented out honey, nice rustic saison yeast, and a touch of funk. Flavour has a nice complex rustic yeast character, gentle funk, and somewhat fermented out honey. Rustic, complex and buggy finish. Excellent.

750mL Batch 2 bottled Sep 2022, drunk 6/1/23. Minimally hazy, golden-brass. Gushing, large white head, good retention. Tart, tangy, but not obnoxious, lactic nose rounded out by Brett and rustic grains. Tropical accents from hops don't go overboard either. Clean, aromatic, lovely. Juicy, malty, dry, rustic, chewy grains but not sluggish. Big lactic burst softens to a Brett finish with soft wine, barrel notes and tropical hop flavors lingering. Gentle, mild, highly flavorful and balanced for its size.

14 December 2019. At 2nd Great Timternational Beer Tasting. Cheers to Ghent beer crew! Clear yellow-golden, unstable, thin, frothy, white head. Aroma of honey, candied apricot & orange, butter, wet straw, lactic acid, Napoleon candy, vague latex. Taste has sweetish apricot & orange, sour lactic acid, funky straw, honeyish maltiness & bitter grass. Dry, tart, grassy hoppy finish, more honey, ripe apricot & warming white wine-like alcohol. Medium body, oily texture, soft carbonation. Something of a 'mutated' & enhanced Saison.

Clear orange beer, small creamy off-white head, unstable, non adhesive. Aroma: sweet, floral, sugary, almonds, marzipan, little soapy, orange peel. MF: soft carbon, medium body. Taste: sourish, interesting, pretty bitter, dry, fruity. Aftertaste: nice acidity, dry, slightly sugary, honey, lovely stuff, bitter, grassy, nice.

Draught at OH: pours gold with barely any head. Aroma is funky brett notes, flowers, wood and some fruitiness. Taste is tangy, nice soft honey notes in there. Lightly sour. Loads of flavor and high abv is very well covered.
