a delicious reimagining of our iconic Parabola barrel-aged imperial stout

To create this first-ever canned Vintage beer, we aged a selection of Parabola for one year in premium bourbon barrels, then blended it with a complement of Velvet Merlin Milk Stout to create a silky mouthfeel and a more approachable ABV of 9.2%.

Finally, we infused the beer with Madagascar vanilla beans, cocoa nibs, and sea salt to achieve a full salted caramel-style drinking experience.

“Parabolita has the girth and richness of Parabola, but with a creamier texture,” said Brewmaster Matt Brynildson. “The cocoa nibs and vanilla really accentuate the beer’s boozy caramel malt character. It somehow manages to be massive, mellow, and drinkable.”

Barrel Program Manager Eric Ponce added: “The dash of sea salt acts just like it does in food. It makes the aromas pop, elevates the flavors, and and adds texture to the mouthfeel.”

“We were envisioning a chocolate-covered salted caramel with this edition, but there are other flavor themes that we might want to explore down the line,” Matt said.

We know what you’re thinking though: chocolate? Vanilla? Caramel? A dash of sea salt acting just like it does in food? When we initially introduced Parabolita to the world, we took some friendly flak from a few beer purists who didn’t like the sound of a high-gravity stout infused with flavors they normally associated with meals you normally only treat yourself to after you’ve finished your dinner.

The term “dessert beer” was thrown around, and apprehension was in the air.

Can from Lone Star. Luggage ride home. Low-ball. Frothy, extra sticky, dark brown, opaque can pour @home. Low-ball glass, not too cold. Caramel, vanilla & cocoa upfront like a freshly baked cookie. Hint of fruitiness & amaretto in the air. Taste is bittersweet & slightly astringent. Cookie dough & Asprin bitterness with a touch of bourbon sharpness to cut it. Sweet n smokey caramel with a bit of cocoa & burnt salt on the tail. A touch too sweet. Quite good.

Vanilla nose. Black, firm medium tan head, nice lace. Vanilla, charcoal. Fullish body, easy carbonation. Not as complex as hoped.

Sweet, creamy and roasty with some chocolate, vanilla, hints of cocoa, bourbon, salty caramel, fudge, toffee and syrup. A bit too sweet and slightly artificial vanilla notes.

16 oz. can, pours black with a large tan head. Aroma is full of salted caramel, chocolate, and subdued bourbon. Flavour is loaded with intense chocolate, lots of salted caramel, and big bourbon notes to round it off. I'm not a huge fan of salted caramel, but this is a good use of it; the base beer is so good that it manages to work. Very solid.

From can to glass. Pours deep brown with brown head. Original review text: Can purchased at Gourmet Haus. Pours very deep brown with mahogany highlights. Light brown head that fades to a rung of small bubbles. Beautiful aroma of salt, vanilla, slight booze and chocolate. Flavor is chocolate, sweet lactose, caramel, and salty. This is really nice. The 9.2% is well hidden as it tastes closer to a regular stout from the flavor than an Imperial.

KYGGE 220423. Red black color with a beige head. Aroma is roasted malt, coffee,chocolate. Flavor is roasted malt, coffee, chocolate, alcohol, lactose, caramel. Very nice beer.

Can from Beer Republic. Black with a medium tan head. Sweet with a lot of caramel, coffee, mild bourbon and notes of vanilla.

Can. Almost clear dark brown beer, small tan head. Light palate, mildly dry, good fine minerally crispness. Pretty light for the style. Smooth mellow dark malts, modest cocoaish dark malts. A little thin dark malt cream. Smooth salted caramel, but it sits apart from the body of the beer. Light and slightly minerally finish. It's fine, but lacks the richness and integration of what I would expect from FW.
