Serrata was brewed in collaboration with our friends at Gigantic Brewing. This barrel-aged farmhouse ale is brewed with oats, spelt, and incorporates American hops and red shiso, a common Japanese herb we found inspiration from during a shared trip to Japan. Unfiltered, unpasteurized, and 100% bottle conditioned.

Row 34 draught, 8/11/22. Glassy bronze-copper. No head Huge aroma with quite a bit of shiso but a fair amount of funk too, with Brett and lacto being prominent. Clean, no booze. Juicy, citrusy, massively brett-and-lactic forward which is delicious. Low acetic and the plum adds a complementary playful fruitiness without adding too much acidity. Really soft, deep maltiness with balancing sweetness and good attenuation. Honey, plum, lactic acid and fruity Brett. Great balance, clean, no booze.

Tap at Luppolo Station in Rome. Cloudy amber pour with a medium adhesive foam. Nose: citric and funky, malty, a bit vinous. Mouth: easy, soft farmhouse with a floral and herbal touch. Nice.

Bottle sample at a tasting at Shapiro brewery. Thanks Ory. Clear golden. Citrus, some funk, a bit of honey, fruitiness, earth, spiciness, slightly sourish, sweetish note.
