Golden Sour with Kumquat and Greek Mountain Tea.
Brewed in collaboration with our friends at Seven Island brewery, we blended a super citrussy base beer, brewed with local Scottish barley, wheat and oats and primary fermented with Brettanomyces. Seven Islands brought us wild local ingredients from Greece which we added post fermentation, kumquat from Corfu and wild mountain tea from Mount Olympus. We celebrated the collaboration at classic Dundee pub – The Phoenix, which seemed like a fitting name.

Draught @ Væskebalancen bar. Pours hazy yellow with a white head. Aroma of light sourness, light malt, sweet and light tart fruit, tropical fruit, citrus. Flavor is light sour, light malt, tart fruit, citrus, lime, light spice. Medium body, average carbonation, dry and light acidic finish. 010623

Keg at Awakening 23. Aroma combines sweet and sour fruit. Hazy pale gold. Thin creamy white head. Sour. Fruity. Teay (not just adding that... definite fruit tea element). Light. Thin. Long dry astringent finish. Has impact.

On tap at MBCC 2023, pours a cloudy blonde with a small white head. Aroma brings out lots of thorns, wild yeast and gentle stone fruits. Flavour is full of thorns, with stone fruits, wild yeast, and oak. Thorny and fruity. It's alright.

Tap. Hazy yellow color with white head. Aroma is kumquat, not so much tea, but pleasantly fruity. Taste is the same, kumquat, good fresh fruits, refreshing. Mineraly bite, sparkly carbonation. Solid, albeit simple.
