This wild DIPA was brewed with floor malted Pilsner, malted wheat, and flaked oats. Hopped in the kettle with a heavy hand of Strata and Amarillo, with a touch of Mosaic. We began fermentation in an open top stainless-steel tank with ale yeast before aging in French oak puncheons with our mixed culture for 12 months. After barrel aging, the beer was transferred into a tank filled with freshly picked whole cone Strata (wet) hops and local orange blossom honey. The beer was left to infuse and ferment on the fresh hops for 6 weeks before bottle conditioning with more local orange blossom honey. Tropical notes of pineapple, tangerine, passion fruit, and lychee are supported by a medium body, a touch of refreshing acidity, and Brett funk.

Tap. Clear golden color with white head. Aroma is exotic fruits, white wine, dash of honey. Taste is the same, good honey body, dryish finish, solid funk. Oily mouthfeel, medium carbonation. Interesting combo!
