Een keer per jaar brouwen we een bier die speciaal voor de blend van Dauw gemaakt is. Na de eerste vergisting, als er nog suikers aanwezig zijn, infuseren we het bier één dag met vers geplukte vlierbloesem. Daardoor heeft Dauw een overweldigende bloemige geur, dat na een lange rijping op houten vaten verzacht en nog mooier wordt.
Door het mengen van 3 jaar jaargangen brengen we veel complexiteit in het bier. De jonge vaten geven veel bitterheid en frisse bloemige geuren, terwijl de oudere vaten een rijp en zacht karakter geven. Dauw is een mooi zuur bier met een rijke neus van vlierbloesem, groene peper en citrus. In de afdronk is Dauw nog zacht bitter en laten de aroma’s van de lente bloesem nog lang een indruk na.

Batch #4 2023 Small white head, clinging over not very carbonated darker golden beer. Spicy/herbal. Bit dusty too. Old bread, white pepper. Floral, sour, nectar, rhubarb. Jumble of flavours, but all integrated. Elderflower, absolutely. Light lactic acid, buttermilk, honey, and light lemon. Light body with a slight slickness. Somewhat better carbonated feel than looks. 100% Nevel. Discreet, aromatic, complex, tantalizing, balanced. And immensely likeable.

Bottle. Bit hazy light golden. Quite some elderflower, lots of bright Nevel funk with a hint of white pepper and lemon. Crisp grains and a soft bitter herbal finish. Subtle yet complex, with a refreshing tartness with is not overpowering. Great beer from a great brewery.

Clear blond beer, small creamy off-white to yellow head, little stable, bit adhesive. Aroma: oh wow, very nice, super complex, floral, fruity, acidic impression, green apples, funky, brett notes, woody. MF: ok carbon, medium body. Taste: nice acidic start, very sourish, lemony, bitter, herbal, floral notes, more acidic. Aftertaste: floral, spicy, herbal, pretty acidic, fruity notes, green apples.
