Een keer per jaar brouwen we een bier die speciaal voor de blend van Dauw gemaakt is. Na de eerste vergisting, als er nog suikers aanwezig zijn, infuseren we het bier één dag met vers geplukte vlierbloesem. Daardoor heeft Dauw een overweldigende bloemige geur, dat na een lange rijping op houten vaten verzacht en nog mooier wordt.
Door het mengen van 3 jaar jaargangen brengen we veel complexiteit in het bier. De jonge vaten geven veel bitterheid en frisse bloemige geuren, terwijl de oudere vaten een rijp en zacht karakter geven. Dauw is een mooi zuur bier met een rijke neus van vlierbloesem, groene peper en citrus. In de afdronk is Dauw nog zacht bitter en laten de aroma’s van de lente bloesem nog lang een indruk na.

Bottle. Color: Slightly hazy yellow golden, thin white head. Aroma: Malt, flowers, white pepper hints, yeast, earth. Taste: Medium to moderate sweet malt, grain, typical saison yeast, light sour notes, pretty strong notes of herbal flowers, most probably Elderflowers, light earthy hints. Hints of wood. No harsh tastes, pretty smooth. Nice complexity and balance. Medium body, low carbonation. Nice one.

375ml bottle. Minimally cloudy, brass colour with small, frothy to creamy, half-way lasting, minimally lacing, white head. Funky, floral, herbal, spicy, fruity and sweet-ish, biscuity malty aroma, notes of elderflower, hints of mustard seed, grapefruit zest, mirabelle, apricot and peach, woody, oaky overtones. Taste is tart, tangy, oaky, tannic, floral, minimally funky, notes of elderflower, a touch of peppercress, honey, grapefruit zest, mirabelle; soft palate, dry, minimally astringent palate. Very good, just a touch too much BA flavours.

Bottle in garden, from De Bierkonig, 6th May 18. Pours golden and oily. Aroma is floral, perfume, elder flower, wood, barrel. Taste is floral, elderflower, funk, sweet then dry, wood, herbal, long bitter sweet elderflower finish. Really complex and highly drinkable in the heat.

Bottle shared at Maakun's Homestead. Clear golden with not much of a (white) head. "Some" floral notes. Just kidding, absolutely massive floral notes, plant juice, roadside bouquet, cow parsley, concentrated elderflower, almond, apples. Moderate sweet and bitter. Medium body and soft carbonation. Complete nature hike. Pollen people watch out.

Bottle shared at home. Totally clear golden with small white head. Elderflower, bitter herbs, red apple, more flowers, spicy yeast, soft lactic notes, tannic oak, light lemon, soft grains, a bit more flowers. Light sweet, almost medium bitter and sour. Medium bodied with low carbonation. Quite some flowers! Fantome style herbal, but way less thick and alcoholic. Pretty good.
