A collaboration between Fuori Mondo & Cantillon. A blend of two-year-old lambic and Ciliegiolo, a close relative of San Giovese, whose name means cherry in Italian.

(Bottle, 0.75l - a sample, at Stadin Panimobaari, 20251120) The beer poured ruby red and clear. Its head was small and lightly pink. Aroma had sweet cherries, tartness and fruitiness. Palate was medium bodied and dry with rather carbonation. Flavours were tartness, sweet cherries, fruitiness, grapefruit and bitterness. Aftertaste had berries, tartness and bitterness. A tasty tart brew with clean berry flavours.

By the glass from keg at Cantillon. It pours clear deep purple with a quickly dissipating pink head. The aroma is tangy, juicy, purple fruits, blackcurrant, bramble, purple grapes, damson jam, more subdued funk and fruit jelly. The taste is drying, very much fruit forward, juicy, jammy, tangy, vinous, loads of purple fruits, blackcurrant, blackberry, raspberry pip, bright acidity, funk is there but in the background, slick minerality, chalky maybe, tannin, damp oak, very juicy for cantillon and smooth through the finish. Medium body and dissipating carbonation. A very pleasant fruit forward lambic. Not so much depth perhaps, but super enjoyable.

Pours darker pink / purple. pinkwhite, medium sized head. Scent is very typically Cantillon funk, quite intensely so, ever-so-smooth with the grapes. Cherry and strawberries (both fresh) come to mind. Mild wood. Taste is full, smooth cantillon funk and grape character. again, cherry and strawberry come to mind, with some earthyness and very light but surely present tannins. wood takes the background option. Acidity is mild. Quite a good middle ground between wine and beer, with way less tannins than red wine, but the fruityness it should have, is all there. Along with the mild acdidity that lifts it's drinkability, this is a very good one indeed. Worth the 'hype' ? perhaps not, concidering other, less hyped Cantillon - but surely so this is a beer to savour, and another proof why Cantillon is as loved as they are.

Poured from a bottle dated October 22, 2024.
Aroma is grape forward and quite musty with a dark grape flesh note. Light tannins. Faint grain and light alcohol notes. Hints of earthy, herbal phenolics. Tart cherry notes.
Pours a dark reddish purple with a medium small, thick, creamy, pinkish head that recedes steadily to the edges where it lingers.
Flavor is slightly acidic with faint grain notes. Medium light bitterness and light alcohol notes. Moderate grape notes and must with medium light tannins and light oak. More intense grape notes but not jelly or concord grape, instead more of a red wine note with a bit of cherry.
Mouthfeel is medium bodied with medium low carbonation. Low astringency and low alcohol warmth.
Overall, a solid bottle with nice grape notes with solid fruitiness. Nice oak notes and balanced acidity.

Draft @ Moeder Lambic Fontainas.
Pourpre, léger voile, col pétillant rosé peu tenace.
Arôme sur un bouquet délicat de fruité – repris de suite par la signature olfactive de Cantillon – parfum léger floral avec un côté cerise noire, presque sur une touche de kriek tout en gardant un léger caractère raisin.
Palais est sec, bien effervescent, fruité sur le raisin avec une pointe tannique – fruits rouges et noirs – noyaux de cerise noire – acidité du fruit qui revient avec l’acidité du lambic. Le tout garde ce côté Cantillon-esque – cave, cellier, poutre de grenier, vieux grains et un côté cerise / raisin qui revient sur la fin.

750mL bottle at La Fruitiere. Pours murky mahagony with a white head. Musty nose, lots of tannic grape skins, some funk. Flavour has tannic, musty red wine grape skins, woody. Fantastic.

750mL bottle, 2022 cork, drunk May 3, 2024, Ma Che Siete. Clear, bright, blood red with magenta. Small, pinkish head quickly to edges. Bright fruit, low to moderate acidity. Soft mineral and funky in the background. Juicy with mild Brett and mild lactic character. Very clean and snappy, polished. Oh baby. Juicy, zippy, perfectly carbonated with frizzante, tight bubbles carbonation spreading juicy, low acid grape across the palate. Gentle malt sweetness, light oak dryness and plentiful Brett with low lactic, no acetic. Wonderful, juicy, gently sweet fruit and lower funk. Phenomenally drinkable.
