Chapter Two, Wheat Beer, is inspired by the German Weissbier tradition but we have also been influenced by the very ancient Witbier style from the low-countries of Belgium and Holland, in that we use unmalted wheat in our brew along with malted barley.
The Wheat makes up nearly half of our mash and, being unmalted, presents us with some technical challenges in the mash but the smell of the mash, like fresh pasta, more than makes up for this. And when we combine the Hallertau and Saaz hops into the brew then the aroma is something to behold. The Hallertau hop is delicate and imparts a floral, slightly fruity character to the beer and with the addition of the Saaz hops we attain an excellent aroma in this beer.
Our Wheat beer is based on some of the oldest brewing recipes known in Europe, going back to a time before the use of hops where spices and herbs were used to both flavour and help preserve the beer.
In keeping with this history we add coriander to this beer in the copper which all results in a beer that is not bitter (around 20 bitterness units), has a great acidity and natural carbonation, is a pale hazy yellow in colour with a perfect white head and an ABV of 5%. We use a special yeast strain that comes from Germany to ferment our Wheat beer and this in turn imparts its own special flavour to the beer.

Bottle 0,5ltr: Weizen from Durban, Saouth Africa but it likes a decent brew from Bavaria but this one of the greatest beers from the African Continent i ever taste.

Bottle. Blonde and clear. Flowery wheaty aroma. Fairly dry, flowery, slightly perfumed flavor with traubenzucker and orange. Lightly spiced. Decent.

Trübes dunkel goldgelbes Bier mit geringer Schaumkrone. Geruch hefig, fruchtig. Geschmack hefig, fruchtig, säuerlich, muffig.

Bottle. Unclear golden -orange colour with an off-white head. aroma is malt, citrus, acidic. Flavour is malt, dust, caramel, wheat, citrus, hop, acidic. Strange beer.

Im herben und hefigen Antrunk fällt eine leichte Rauchnote auf, die sich im Nachhinein als Koriander entpuppt. Daneben ist das Bier aber nur wenig aromatisch. Bitterer Abgang mit Koriandernoten. 9/7/7/6/5/6

340 ml bottle. Hazy orange body with a diminishing white head. Aroma is light malty and doughy with a hint of caramel and light citric fruit and spices. Flavor is rather unusually, some malt, acidic fruity, some kind of fruity bitterness and yeast. Medium body. This is not a particular good beer, but not really bad either. I actually have to give some extra score for the exoticness.

Bottle. It pours a slightly unclear body, golden in color and with a finger-thick off-white head. Quite acidic on the nose, citric acid that is. Doughy malts and a touch of fruityness. The flavor is reminiscent of citrus peel and dough, with some spicyness added. Quite bitter, slighlty acidic and also a bit thin on the palate. There’s a little bitterness towards the end. A strange one, loads of different aromas and also quite a few different flavors, but it’s not impressive at all. 110406

Bottled (from bierzwerg.de). Hazy yellowish golden colour with a mediumsized foamy/creamy head that leaves some lace. Aroma is wheat, some sweet maltyness, mild grains, banana as well as some yeastyness. Flavour is bready malts, mild cardboard, some wheat, citrus fruits, bananaish notes as well as some mild wooden notes. Refreshing, but a bit thin as for the body.

Bottle 340ml.Hazy medium grey - yellow to orange color with a average, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, wheat, sour malt, moderate yeasty, cardboard fruity notes, sweet vinegar notes. Flavor is moderate sweet and light acidic with a average duration, yeasty, dry, citrus tart. Body is light to medium, texture is watery, carbonation is soft. [20101211]
