Bourbon Barrel Aged Cinnamon Bun Stout
Fellow Rebels! We're bringing a new hope to the year with our first #StasisProject release of 2022!
Memory Systems is an Imperial Stout brewed with a caramel-toned, baked pastry malt base and aged in a braid of Old Fitzgerald, Heaven Hill, and Elijah Craig barrels that strike back with a finished 14% ABV.
We conditioned the beer with a four-day marshmallow steep and a recirculation through Madagascar vanilla beans, Vietnamese cinnamon, and cassia bark. An opening crawl of cinnamon awakens the senses and swirls into a vanilla frosting mid-palate with galaxies of marshmallow as the liquid warms.

650 ml bottle, thanks to ClarkVV on the share! Aroma legitimately a Cinnabon. Aroma of melted icing, cinnamon, bread. The flavor is wonderful. Chocolate, bread, and cinnamon are balanced without it becoming overly sweet. Amazing!

Bottle pour (2022 release) shared by ClarkVV-thanks, Clark! It's an opaque, inky black with nice viscosity. Aroma is strong cinnamon, vanilla, marshmallow over roasted malt. Taste is strong vanilla, cinnamon, bourbon. Mouthfeel is medium bodied with velvety smooth texture, soft carbonation and finish as taste. Overall, this is everything as advertised and wonderful palate.

2022 bottle drunk 5/27/23. Dark. No head. Smells pretty wild. Marshmallow. Vanilla and light cinnamon pastry. No alcohol. Definite dark chocolate and fudge with cinnamon lightening things throughout. Sweet, coconut almost but no, it's massively vanilla flavored marshmallow. Holy Christ. This is the most marshmallow and vanilla forward beer I've ever had. Thankfully there's enough bourbon and roasted acidity. Sweet, fruity, malty, damn. These guys....

Bottle. Pours black. Chocolate, sweet red fruit, creamy, cinnamon, booze, milk chocolate, vanilla, marshmallow, silky nutty bourbon, decadent cinnamon, fairly sweet but just enough barrel. Good full body. Excellent.

On tap at Bottlecraft - Little Italy, pours black with a small tan head. Aroma is loaded with intense cinnamon, accentuated by vanilla beans and light marshmallow. Flavour is ridiculously intense, with intense cinnamon, but the cinnamon is melded well with marshmallow and vanilla beans. The barrels are further back, rounding this out. What a beauty.
