“L’hiver saison” is French for “winter season.” We brewed up this special, dark, farmhouse ale to usher in the new season and celebrate the official start of winter.
L’hiver Saison was brewed with a base of light Munich malt layered with a blend of specialty rye malts. We also added a touch of NJ cranberry honey to the boil along with some European hops - Slovenian Styrian Fox and German Tettnanger.
L’hiver saison was fermented dry with a blend of two of our favorite saison yeast strains that contribute spicy phenolics and fruity esters.
It pours a burnt sienna hue into a glass and froths with a beautiful beige head of long lasting, aromatic foam.
We get notes of black cherry, honey graham cracker, spicy black pepper, toasted rye bread, caramelized brown sugar, forrest floor, black currant, pie crust, and cranberry chutney.

Draught at Source Urban: pours brownish with off white head. Aroma is roasted malts, somewhat yeasty and spicy. Yeasty almost metallic.

On tap at the Philadelphia location. Pours dark brown. Biscuit, orange, grain, floral, earthy. Medium body. Fine.

Tap at the brewery taproom Philadelphia. A hazed brownish amber coloured pour with a lasting beige head. Aroma is nice rustic grains rye. Farmhouse grains, grass. Autumnal leaves. Flavour is composed of semi sweet, nutty grains, rye bread, white grape, brown sugars. Light funk. Palate is semi sweet, fine carbonation.
