For this small batch Druif, we macerated Pinot Noir-pomace on lambik. The pomace underwent a wine fermentation of more than 12 months, rendering the skins, pits and stalks wonderfully fragrant. We let the pomace sit for over four weeks.
A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Mythopia is a very small organic winery from Arbaz, Switzerland. Romaine & Hans-Peter are known for their long skin contact macerations and expressive wines. This pomace came off their Blue Velvet wine.

0,75l bottle at the Lambic-o-droom. Pink hazy color, small white head. smells cucumberish, funky, pickles, peppery. Below average smell. full body, soft carbonation. tastes tannins, oak, peppery, pickles. finishes dry and light to medium sour with notes of pickles tannins and peppery notes. Did not like it, bottle had been open for a while now before trying though.
