Solid. Loved the fairly fruity nose driven by the sake yeast. Modestly bitter. Lots of lime strong fruit citrus and melon. Very well paired by choosing a very fruity sake.

Ise Kadoya Junbaku Ginjo IPA Sake yeast IPA 6% Pale straw gold with fizzy white foam and a sweetly tropical hop bouquet. Medium bodied with a dry finish. The taste starts off hoppy and sweet then gives you some spicy earthy sake like notes at times but this is solidly an IPA. The beer seems different from earlier ratings. It’s a nice evolution of that Japanese beer style: sake-beer hybrids.

330ml bottle @ monthly tasting, Chez Sophie, May 22. Misty gold, small white head. Has a nice fruity sweet character, hints of citrussy Japanese fruit, perhaps some familiar sake yeast notes. Pretty decent. If sake tasted like this id try more of it.

30th May 2022; Shrewsbury Beer Share Evening in Chez Sophie. Five guys enjoying themselves. Third beer is a bottle of this. Interesting, misty pale dirty yellow body with a wispy white head. Citrussy nose and taste with a weird, but pleasant yeasty/winey twist (Sake Yeast I suppose).

Tap at Craft House. Bright, deep gold. Nose is huge ginjo-ka, with lemon, malt. Very perfumy--almost too much. Sweet, tangy, ginjo sake flavor. Very big in flavor and well balanced. Tastes more like sake than beer. Interesting stuff and well made, if a little hard to drink in quantity.
