Clingstone is a blend of two barrels filled in July & August 2021, fermented with Kveik yeast, Saision yeast, lactobacillus and brettanomyces before ageing for five months on second use damsons. This beer foregrounds the fascinating character of the damson stone alongside a refined and delicate fruit character. The aroma is full of sweet almond, rose and juicy plum with earthy funk tying it all together. A full body and moderate acidity amplify the vinous character with notes of damson jam, vanilla and marzipan. Drink now or age to see where the funk takes it!

10 November 2023. At Billie's Craft Beer Fest. Thanks to tderoeck for sharing today's beers - cheers to so many more!

Clear golden. Ripe apricot, grape, green apple, wood, vanilla, cheese, vague popcorn. Sour apricot, green apple, gooseberry. Slightly funky & cheesy. Tart stone fruit, brett & wood. Medium body, slick texture. Not the most intense of Sours, but good.

Pours clear, copperblonde. No real head. Scent is mild, a bit tart. Taste is tart, sharp, clean, elegant. Decent, refreshing and sessionable beer. Not too much aroma though.

Draught Small rim over pink to reddish golden beer. Fruity nose with pink/red berries, rosé wine. Faint hints at fruitsugars in the nose already. Demure fruitflavours. As above, but terribly watery. Hints of apple, grape, lime, plums. As said, watery, almost empty. Not very carbonated either. Double the ingredients (not the water) and this might prove excellent.

10/XI/23 - on tap @ Billies Craft Beer Festival (Antwerp), Day 1 - part 1, BB: n/a (2023-930) Thanks to NathanVC for sharing today’s beers!

Clear peach orange coloured beer, creamy solid off-white head, unstable, falls down quickly. Aroma: nice, pretty funky, brett notes, a bit floral, sourish impression, wood notes, pretty complex, nice! MF: ok carbon, medium body. Taste: bitter, nice acidity, very fruity, floral touch, pretty complex. Aftertaste: funky, a little bitter, woody, nice one, could pass for a Belgian lambic if you ask me!

75cl bottle @ monthly tasting, Chez Sophie, Oct 23. Cheers Mike for this! Hazed pinkish golden appearance, white head. Top drawer wild beer this.. nicely balanced fruity elements.. nicely blended.. gentle jammy moments with a measured sour edge.
