BA Flanders Red with Strawberries
Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery.

Bottle via the online shop. Hazed deep reddy copper with a sturdy fairly dense lasting ginger foam. Nose is oaky and vinous. Flanders-esque balsamic. Strawberry jelly. Taste is pretty tart and dry. Softens up as the beer warms. Nicely juicy sweet tickle. Nice mouthfeel here all soft and foamy with a tart balance. Juicy tart finish where the acidity stays low. Nice one.

Keg at the Hanging Bat. Pours muddy red-brown with no real head. Aromas of balsamic, red fruit and wood. Taste is mouth-puckering sour up front, layers of flavour underneath. Red fruit, faint smoke, leather, tobacco, vinegar. Dry finish.

Аромат интересный, необычный, есть кислые нотки, яблоки зеленые моченые, совсем легкая уксусная составляющая, но очень странные нотки от чего то паленого, прямо сильный дымок. Цвет темно коричневый, пенка супер тонкая. Вкус снова покрыт какой то деревянной дымкой, что очень странно. Есть немного сена, мочености от яблок, но все это в жиже от дыма. Можно пить но странно и не особо в стиль.

On tap at Craft Beer Co - Clerkenwell, pours an hazy dark amber brown with a small beige head. Aroma brings out Worcestershire sauce, balsamic, sour red fruits, and wood. Flavour is tart, with lots of balsamic, Worcestershire sauce, red fruits, and oak. Woody, fruity and tart. Nicely balanced.

Keg at Craft Beer Co Covent Garden. Aroma combines vinous sourness with pulpy berries. Cloudy-opaque darker brown. Thin foamy light beige head. Heavy sour. Red wine and berries. Light-medium bodied. Slick. Prickly average carbonation. Long dry astringent finish. Fruity Flanders Red.
