Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery.

On tap at The Rusty Bucket, Eltham. Deep red pour with a light pink head. Nose is strawberry jam, balsamic vinegar, red cherries,. Taste is red cherries, oak, strawberry jam, zesty lemon, more balsamic oodles of red fruits in the burp. Dry, tart & sweet finish.

Murky dark red colour with thin head. Aroma of very sweet overripe strawberry. Almost syrupy. There's a tangy sharpness in the taste going in the direction of sour candy. Some weird sugary sour childhood sweets flash before my eyes.

Keg at lost in leith. Pours deep reddish amber, nose is funk, wood, more elderflower than berries, taste is tart, juicy berries, savoury, funk, zesty.
