Brewed in celebration of Lent and Easter season, Carnevale is a light-bodied Saison, using Brettanomyces along with Amarillo and Simcoe hops to generate flavor and depth. Carnevale’s complexity grows with time. The citrus notes tend to wane and the wild yeast rears its wonderfully tasting head.

Bottle at home. Pours hazy orange, nose is floral, citrus, toffee, yeasty, taste is dry, bretty, vanilla, fruity.

Numerous vintages of various ages (tap and bottle), most recently drunk on 9/14/15 (bottled).
The first time I ever had this beer was a VERY memorable experience. It was at Deep Ellum and it was on draught and I wouldnt shut up about it while drinking it or for a few days afterwards. Pretty much the perfect manifestation of brett, light and lively, but still with enough tartness and fruitiness, though nowhere near dominating the beer. Very much saison-like, in the good, Belgian way, and I didn’t get much of the American hops; certainly no resin or pine/grapefruit. Tight carbonation and light on the alcohol (though some bottles I’ve had have been slightly on the boozey/estery side). At best, I’d put this in the mid to upper 4’s. The worst bottles I’ve had are still upper 3’s so I guess I’ll give it a general average score, though tending higher as I believe the less desirable bottles had sat warm on the shelf for a long time.

2015 version. A golden saison with a thin lacing white head. In aroma, sweet caramel malt with light fruity notes, light grassy hops, light mineral notes, OK. In mouth, a light fruity malt with light grassy hops, light fruity esters, light cloves, no Brett noted, decent but more like a regular Saison. On tap at San Marcos Taproom.

Not vintaged (at least nothing left to denote this at the store and onwards), but not sure what exact beer this is, since it shows at 8,0% abv. Crystal clear light copper and bronzed coloured body with a large and rather fast-dying pure white head that leaves a pretty ugly lace on the sides. Aroma of grass, pale wheat, malt, pepper, hay, hints of hops and a some subdued fruits and sugars. Medium to Full-bodied; Dense mouthful with a good orange and curacao flavour showing some nice fruit quality coupled with a rather large alcohol presence, some malt body and a good fresh herb and very dry flavour to finish. Aftertaste shows a rather complex and dry, grassy/hay finish with more of a kick from the alcohol than anything else - a rather pungent beer for the style leaving almost a bitterness of metal and alcohol, akin to an Imperial Pils or a strong European Lager - interesting. Overall, a good beer, but a tad rough around the edges with a nice complexity that is almost overshadowed by how strong of a beer this is, especially for the style and even more so for the size of the bottle (75 cL). I sampled this 75 corked and caged bottle purchased from Liqour Outlet in Boonton, New Jersey on 12-July-2015 for US$7,82 sampled at home in Washington on 27-August-2015.

Draft at The Confessional. Poured a slightly hazy orange color with a small white head. Aroma was light funky yeast notes, some light peppery notes and a touch of spice. Flavor was notes of spice, wheat, slightly sweet. Tasty.

On tap at the brewery. Golden color with small white head. Fresh funk, a bit sweet fruits, spicy. Taste is biscuity-doughy, a bit esthery, carbonation is medium. A very solid Saison.

Huge light yellowish, very stable head over well-carbonated, coldhazed, golden beer; end of bottle solid yeast. Sharp "beery" nose, yeast, breaddough, rootspices, coriander. Coriander, wry rootspices (mustard seed, horseradish, ...). Peppery finish, but with sweet orange and strawberry. Brett is absolutely not obvious. Very spritzy, near fizzy carbonation, high attenuation, medium bodied seemingly. Rather unspectacular for Tomme...
