Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Coconut PM Dawn. This batch utilizes our new Trillium blend cold brew from Barrington. Like our previous PM Dawn variants, we slightly dialed back the coffee ratio to allow the heavy dose of coconut to balance the beer and perfectly accentuate its flavor profile.
Coconut PM Dawn presents a dark chestnut brown color with khaki head and lacing. Bold, freshly roasted dark coffee aromas swirl to the nose accented by notes of sweet shredded coconut, toasted graham cracker, caramel and chocolate chips. On the palate, cold brew derived flavors of roasted hazelnut and melted dark chocolate interweave with a bright coconut profile calling to mind macaroons, Mounds bars, and Caribbean sugar cake. As with all of our PM Dawn variants, Coconut PM Dawn offers a medium to heavy body with a luscious mouthfeel and a light bitterness for a balanced and smooth finish.

16 oz can from Canton, 7/31/20. Pours a darker brown color, thin head, light lace. Big on the cold-brew coffee here, just lots and lots of coffee flavor. Coconut comes through on the finish. Really nice stuff.

Can sample at a tasting at Yoav's place. Black. Lots of vegetal coffee, olives, roast, some coconut, sweetish-sourish, bitterish note, medium-bodied.

Coconut, cold espresso, roasted malts, choc. Liquid bounty. Very sweet, very heavy, slow sipper. Great stuff.

Pours mahogany tinged black into a snifter. Mocha head with good retention recedes to skim surface. Chocolate, espresso and coconut aromas. Crisp with sweet cold brew and milk upfront turning to mounds before the dry, lasting earthy marshmallow finish. I like cold brew, chocolate and stouts; ergo, a winner.

Taster pour on tap at the brewery. Appearance is opaque black with thin ring of beige head, no discernible sparkle and no lacing. Aroma is rich roasted coffee, hints of chocolate and tobacco. Taste is strong coffee, chocolate and roasted malts. Palate is medium bodied with smooth, silky texture, soft carbonation and finish as taste. Overall, what a mouthfeel and great mix of sweet and bitter. Outstanding!

473ml can, thanks tiong. Dark brown pour, limited foam there, some bubbles only. Toasted coconut and lots of roasted coffee in the nose. Good roast character, like cocoa. Taste is sweet and creamy, coconut is quite strong, roast bitterness, coffee beans and milky coffee, chocolate sauce. Dry roast plus some relatively sweet lactic thing. Herbal-biased bitter linger in the finish. Quite pleasant.
