Silhouet is a special blend of different wild ales aged for 2 to 5 years in oak barrels, and a rustic saison. The outcome is a beautifully balanced wild ale which marries the complexity of aged, characterful wild ales with fresh and aromatic qualities of a saison.

Silhouet pours a dark orange color with lively carbonation, resulting in a big, frothy white head. In the aroma, you will find notes of poached peaches, brioche, black pepper, a hint of fragrant strawberries, as well as some hay and funk. In terms of taste, spicy notes along with the presence of peaches and lemon, work harmoniously with a gentle sourness and bitterness. The wild yeast characteristics like cherry pie and hints of tropical fruits like pineapple and mango beautifully complement the fresh and floral saison. To create Silhouet we used a generous amount of 5-year-aged Hallertau Mittelfrüh hops, resulting in a wonderfully dry and slightly earthy finish. The wild ales, aged for 2 to 5 years in oak puncheons, become beautifully integrated in the beer, imparting oxidized notes reminiscent of sherry wine like subtle hints of honey, vanilla, and walnuts.

This beer is very suitable for longer ageing. The rustic saison qualities will marriage even more with the matured beer. What’s interesting to notice is how the wild yeast will transform those flavours over time in the bottle. When drinking fresh, we recommend to let the beer open up in the glass.

Bottle, 30.8.2023, huge thanks Zhenya! Hazy orange body, off-white head. Orange, old barrel, Brett in the aroma, bit of raisin and alcohol. Lean, dry, juicy taste, plenty of sourness, dry white grapes, perfumey, alcohol.... Fun fun, bit much but fun!

Bottle shared at Thijs tasting. Clear deep golden. Dry funk, lactic, oak, aprocots, soft yeast, green twigs. Medium sweet, sour and bitter. Medium bodied. Interesting!

Draught @ Mikkeller Beer Celebration, 2025. Early Friday. Pours hazy golden with a small bubbly head. Sesame, funk and wood. Tasty. 4.0

Bottle pour at MBCC 2025 (Yellow session), pours an opaque dark orange with a small white head. Aroma has plenty of rustic saison yeast, oak, and subtle dry-hopping. Flavour has a bunch of earthiness, muddled wild yeast, and maybe a touch of oxidized hops. Not working for me.

Bottle pour at MBCC 2025, yellow session. Pours murky dull gold with a white head. Musty plums, leather, earthy yeast on the nose. Flavour has tannic plum skins, juicy plums, earthy yeast, leather. Great.
