The General is the name of our mighty, oak vat in which only our best vintage ciders are aged. It is bold and satisfying with notes of Seville orange, plum and baked apple, rich and rewarding with a long, warming finish.

Key Apple Varieties: Yarlington Mill, Dabinett, Tremlett’s Bitter. Food Match: Gamey Meats and Sunday Roast.

Appearance - golden and clear with gentle carbonation. It actually has something of a head that sits about for a bit.
Nose - wood, dry apple skin with apple tart beneath.
Taste - more juicy apple this time, with proper apple tart ripeness. Some wood and hay lurking.
Palate - full bodied, big tangy middle and great acidity on the finish which refreshes and makes salivate for the next drink.
Overall - proper cider!

Bottle from Ladram Bay Holiday Park, Devon. Clear gold with some brief foam. Apple aroma with hint of vanilla. Taste of fruity apple, apple peel, vanilla, light wood, a touch of syrup. Somewhat warming going down but it doesn't taste like a 8.4% cider. Decent

Crispy, active, clear, dark honey gold pour at Shig's neighbor's tasting. Bitter, cryo sweet, grassy nose. Bittersweet Dabinett upfront layered in brown sugar. Earthy, veggie, oily leather, middling tartness, low acid. Boozy bite on the tail. Sweet but nice.

Bottle: Poured a coppery orange with bubble head. Aroma is woodsy, apple, leather. Taste is semi-sweet, apple, tannins, caramel, light bitter.

2/6/2022. From BIAB at the 35th Colchester Real Ale & Cider Festival. Pours clear golden with minimal head. Aroma is semi-sweet apple, caramel, woody, boozy, lightly funky. Medium sweetness, moderate bitterness, light tartness. Medium body, oily sticky mouthfeel, soft carbonation. Increasing bitter alcohol finish. Doesn't try to hide its abv.

Third of a pint on cask at Doncaster brewpub. No head. Cleat golden pour. Quite sweet. Doesn't taste like 8.4%

Cider Freak Day, Sunday 3rd April 2022. I hosted a cider tasting with my good lady, or son, his girlfriend and my sister-in-law (who didn't really join in much). Our 9th and final cider was this, two 500ml bottles, one from me, one from Ben, my son; different BBD's, both in 2023. Auntie Sue woke up and had a glass of this, bless her. Liked this, a clear cider with a bit of oomph!

500ml bottle. Poured clear golden. Ripe apples in aroma, also pear notes. Mild oaky notes, sweetness. Pleasant cider.
