PINTA Kwas Theta 24,7°- it took nearly 7 months to brew this one! Why? First we brewed solid, chocolate and roasted RIS and fermented it with beer yeast and whiskey yeast. Additionally, a part of wort has been acidify with a fresh blend of lactic acid and then added to a beer. In next step we added 1000 liters of freshly squashed juice from Polish sour cherries to the beer, just to make sure that it will be more sour and it will have some fruity notes. In third step we "finished" RIS with wild yeast Brettanomyces. Kwas Theta is extremely sour but also roasted in aroma, chocolate-like and funky (thanks to Brettanomyces). Aftertaste is a little bit sweet, but also bitter and cherry-like. PINTA Kwas Theta 24,7° - sour, wild and fruity Russian Imperial Stout.

Ingredients: water, Weyermann® barley malts: pale ale, roasted barley; Thomas Fawcett: Crystal, Red Cyrstal, Pale Chocolate, Chocolate; hops: Admiral, East Kent Golding, Fuggles; hop extract CTZ (USA); fresh cherry juice from Polish sour cherries; sugar; yeasts: Safale™ US-05, Safspirit American Whiskey; lactic acid blend: L. plantarum, L. delbrueckii, L. brevis; wild yeast Brettanomyces blend: The Yeast Bay "Amalgamation".

330ml bottle. Black pour with a small brownish head. Aroma is sour cherries and some cocoa malts. Solid roast, light coffee and bitter cocoa powder. Light vinegar, light funk, solid sour cherries and berries. Low bitterness, silky mouth feel. Nice stuff..

Bottle at Multi Qlti Tap Bar, Kraków. Aroma is sweetish and tart dark fruits, tart cherries, dark berries, some notes of chocolate. Flavour is medium sour and moderate sweet. Body is a bit above medium. Hardly subtle, maybe a bit too big for its own good, but very fine sweet tart cherry beer.

Bottle. 12% on the label. Black. Roast and cherry in the aroma. Malty, soft roasty sour flavor with brett, cherry and a hint of balsamic Thinnish. A smooth and easy drinker.

50 cl bottle. Pours cloudy dark brown, small tan head. Aroma is fruity, metaloic, wineous, cherry. Sweet, citric. Smooth fruity. Wineous. Sweet and cherry sour finish.

Many thanks to Erzengel for sharing. Almost black beer with a small beige head. Aroma of tart cherries, vinegar, coffee, wood. Taste of sour riped cherries, vinegar, wood, some coffee.

Many thanks to kappldav123 for sharing this bottle! Deep sourish beginning. The beer starts sour with lots of cherries. The grainy rye body in the back fits well, the beer is smooth sour malty with lots of sour cherries in the foreground. Nice round and deep, refreshing with a deep sourish fruity ending. Easy to drink, thick and deep.
