A blend of 2 worts brewed in August & September 2022. Malted Extra Pale barley, malted wheat and malted rye from Crisp Maltings and raw Scottish wheat from Mungoswells formed the base layer. Aged whole leaf Jester and Goldings were used in the boil and whirlpool for some bitterness, tannins and flavour.

The cooled wort was transferred to an open top fermenter and pitched with a mixed culture comprising of multiple Saison, wild saccharomyces & Brettanomyces strains as well as several lactic acid producing bacteria.

After 2 weeks in stainless steel, each beer was transferred to freshly steamed and Co2 purged barrels for the final stages of fermentation and ageing.

Bottle at craft beer junction bermondsey tasting. Many thanks. A light hazed yellow straw coloured pour with a halo of white head. Aroma is soft wheat, funky vinous white grape, melon, funky horsey. Flavour is composed of crisp, light grains, white grape, funky vinous fruit, flaked wheat, chalk. Palate is semi crisp, chalky, semi drying, highish carbonation.

Craft Beer Junction bottle share. Thanks to Wingman for the bottle. A light haze on this paleish gold beer, small pale cream colour head. Smooth palate, semi dry, decent fine carbonation. Soft malts, a light creamy sweetness. Saison herb and tang. A little lemon brightness, mildly ripe lemon. Light and semi dry finish. Decent saison.

750ml bottle pours a lightly hazy yellow with some frothy white head. Nose has some lemon, neutral oak, a little green hop, some green grape, light herbs, some grist. Lightly earthy. Really well balanced and in the flavor too. Light honey, some vinegar, some neutral wood, some Chardonnay but not overly, herbs, citrus peel. Finishes medium-low acid, dry. Well blended.

1/3 pint, draught at Mother Kelly's N17. Shared with Finn. Tiny white head, clingy lacing, hazy late straw coloured body. Moderate farmyard aromas. Mixed taste of saison fruits, earthy moments, and a touch of lemon. Mid-tart, drying finish. Has got some refreshing qualities. (Tottenham Hale,, London 15.03.2024).

Bottle ordered from Ghost Whale. Aroma is sour, vinous, earthy. Hazy-opaque gold. Thick foamy white head. Heavy sourness. Vinous and citrusy. There's juicy sweetness in there. Underlying yeastiness, particularly into the finish. Medium bodied. Slick. Soft-fizzy carbonation. Lovely juicy sour offering.. another one from Surrey?!
