it is our Saison van de Bruwer getting a makeover and becoming BRETT SAISON! Same recipe, still organic, and with the same personality marked by our Brettanomyces yeast.
As a reminder, it is a Spelt Saison, dry-hopped and fermented with added Brettanomyces. Blond, opalescent, aromatic and fruity, with a 'funky' touch typical of Brettanomyces, notes of cereals (especially spelt), a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter.

33cl bottle from AbeerVinum, Rimini, Italy. Pours pale gold, scarcely transparent, with fine white foam. Aroma is citrus, grainy, a little funky. Body is and carbonation are average. Taste is a little pungent, quite bitter, not really sour. Final is average in intensity, fairly long.

0,33l from bottle at Les Brasseurs, Brussels. Bottled 13. July 2022. BB 13 July 2025. yellow rather hazy color, small white head. smells earthy, yeasty, spices, rather Brett forward, light tobacco and bubblegum. Medium body, soft carbonation. tastes Brett, spices, bubblegum, tobacco, earthy, bit herbal. finishes lightly dry and lightly bitter with notes of Brett, tobacco and spices.

Pour at Snallygaster 2025. Poured a bright orange color with a medium sized white head. Aroma was funky yeast, some bitterness. Big and fragrant hops, with yeast, and a big funky character.

0.33 l bottle from 'Etre Gourmet' as 'Saison van de Bruwer' at 5.3% abv, bottled in November 2021 (!). Hazy, golden with a medium large, slightly fluffy, slowly diminishing, white head. Sweetish, rather fruity-floral, fairly funky aroma of lemon peel, manure, gooseberry and hay. Slightly sweetish, moderately bitter, quite dry, gently fruity-floral and rather funky taste of lots of manure, lemon peel, gooseberry, hay and grains, followed by a short, moderately bitter, fairly dry finish. Thin to medium body, gently effervescent mouthfeel, average carbonation. Too much brett funk, unfortunately in an unpleasant way, yet an interesting brew.

330 ml bottle. Pours a dull amber with full head. Aromas of Brett, lemons and wheaty malts. Flavors follow same with dry citrus and additional herbal notes. Bitter Bretty finish.

Bottled 13JUL22, drunk 6/8/25.
Clear and bright gold-brass. Sizeable, well-retained, white head.
This is like perfectly developed and in the sweet spot. Luscious Orval-like yeast, though less bandaid than some of the best Orval noses I've smelled. No over-developed notes yet, and a biscuity and rustic, lightly bready spelt/malt character to gently balance. Soft funk, black pepper, honey and floral notes linger.
Bright and clean with dainty Brett done perfectly. Peppery and gently acidic with nothing overdeveloped and an excellent, deeply malty texture that shows good attenuation. Balanced and bright with luscious Brett for days.

Bottles from House Of Trembling Madness (2024) and The Beerhive (2025). Hazy pale golden body with a huge white head. Low carbonation. Faint lacing. Aroma of green apple, funky yeast, rhubarb and lemon sherbet. Flavour of lemon, lime and green apple with a dry, zesty finish. Medium body with a watery, slick mouthfeel. Light fizz. This is zippy and bright, despite both bottles being brewed 3.0 years and 2.5 years ago; the yeast has certainly taken effect.

Bottiglia. All'olfatto si esprimono sentori di sour. La finezza olfattiva è elevata, permanendo in maniera sufficiente. Il manto birroso superiore ha una buona tenuta. La grandezza delle bollicine è medio-fine. Il liquido appare velato. Bollicine fini costituiscono la forma della frizzantezza, con carbonazione persistente. Il colore è giallo dorato brillante. Il corpo è pieno. L'amaro è di media potenza e c'è anche una componente acidula in maniera pungente. La forza gustativa è elevata e la durata è buona. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è intenso. Sulla lingua si attestano note di frutta secca, un accenno di resinoso, agrumi, arancia, mandarino, erbe aromatiche, ananas, albicocche, cereali e sour.
