This crisp and dry table beer has been aged in barrels since our first brew day in December 2021. A complex mixed fermentation character brings notes of hay and funk, with hints of pineapple and coconut leading into a tannic finish from the wine casks. Fresh lemon and lime zest round out the beer. This beer will continue to develop over time as the fruit flavour fades and is transformed by the yeast into something wilder.

Panda at home thanks to Ed Danlo. Amostly clear golden yellow coloured pour with a loose white head. Aroma is lime zest, funky lemon, verbena, lacto, green citrus. Flavour is composed of flaked wheat, mineral, zesty, floral citrus, grass, firm bitterness. Flaked grains. Palate is fine , light, mineral, chalky. little harsh.

Sample thanks to Danlo. Cheers mate. Pours a misty pale gold, thin white ring atop. Aroma of citrus, lemon, gentle pineapple. Flavour profile is light with soft creamy shades, soft coconut, pineapple hints, pleasant delicate complexity at play. Interesting grisette.

440ml can from Wee Beer Shop. Pale golden colour, white foam head and aroma of soured fruit, hay, funk, lemon rind, wood. Taste is sour, yeasty, herbal, with white wine notes, citric, fruity, funk, wood barrel, tannic, and drying bitterness. Light bodied, medium carbonation, tangy funky bitter finish. Nicely drinkable.

Can from Westhill Service Station. It pours clear gold with a fluffy white head. The aroma is grape must, gooseberry, zingy, tangy, lemon - lime peel, nectarine, hay, funk, barnyard, bread, damp oak and grass. The taste is crispy, firmly dry, snappy, some bitterness, tannin, dry oak, grass, leafy, straw, slightly floral, pithy, zesty, lemon, lime, apple skin, gooseberry, white grape, touch of spice, deep funk, barnyard and some dirt with a bone dry woody finish. Light+ body and soft, fluffy carbonation. Very well out together funky table bier. Crushable and satisfying.

Can from Lupe Pintos. Hazy bronze body with a thin white head. Steady carbonation. Patchy lacing. Aroma of lemon zest, funky brett and white wine. Flavour of oak, steel, white grape and cloudy lemonade. Thin to medium body with a slick texture. Light fizz. A unique, tasty beer with complexity that belies its 3.6% ABV.
