Anbai literally means “Salty Plum” and the word is also used to describe the stat of taste and flavor. Ii Anbai means “just right”!
Hitachino Nest Anbai Ale is brewed based on the high alcohol version (7%) of the siganture beer Hitachino Nest White Ale, infused with locally grown green sour plum (ume), and finished up with a pinch of Japanese sea salt (moshio). The balance of sourness, bitterness, comes from the plum and subtle saltiness, great umami taste of the sea salt is “Ii Anbai - just right!”

Tap. Pours nice golden, not much foam there. Aroma is nicely tangy, some sourness there but in a balanced way. Taste has this distinctive plum character, some umeboshi! Slat does not come out and I guess that’s a good thing for me. Nice interesting beer, sour but not too sour, flavourful and totally enjoyable.

5 oz. draft at Tørst in Brooklyn, New York. The pour is a hazed orange with a small white head. The aroma is softly tart, floral and a bit of medicinal yeast. The taste is plum fruit, herbal, and a light citrus tart and grass in the back. As the beer warms a kind of a salt tart flavor. Soft and beautifully integrated flavors. The palate is light to medium bodied with natural carbonation and a soft lingering finish of tart and grass. Unique, really tasty.

Light tasting for a gose but reasonably well balanced and some interesting and subtle plum infusion. Pours light blonde with good head and lacing. Some hay and a little salt. Finishes with light sourness. Tap at Daikaya.

Keg at Taps beer bar, Kl. It pours cloudy pale orange with a decent fizzy white head. The nose is earthy, spicy, salty, wheat, grainy, light funk and plum skin. The taste is crisp, tart, salty, minerals, plum skin, minerals, umeboshi, lactic, decent acidity, light alcohol and citrus peel with a drying finish. Medium body and prickly, effervescent carbonation. Complex, tart and intriguing. In a bar in Malaysia drinking 7% sour beer by the pint and watching Wimbledon on tv. Fuckin awesome all round.
