Wassail is known for warmth and spices. Our rendition goes leaps and bounds beyond a traditional winter warmer, drawing inspiration from the dark, spiced ales from Belgium and our love for experimental brewing in SoCal. This dark imperial wit ale features spices to complement the spiced notes imparted from the yeast and prance upon the rich, dark fruited character of the specialty malts.

Bottle to tulip.
Appearance: black in the pour and black in the glass; small cap of a little white foamy head which dissipated fairly quick and didn't leave any lace
Aroma: the amount of nutmeg, ginger and allspice in this is extremely high; some Belgian sugars, candied dark fruity tones, chocolate malts are in there but seem a bit overshadowed by those spices I already mentioned
Flavor: leads with those spices I previously mentioned then some sweetness from those malts; finishes with those spices and Belgiany-like sweet tones and malts
Texture: medium bodied, good as a sipper; light smoothness as the spices do make a good play at some assertive qualities
Overall: I might not see this as a true Belgian quad as there's so much spices that seem to block the "Belgian quad" parts from coming out but there's something actually somewhat good about this so I would give it another chance if given.

Almost black colour with small beige head., Aroma of candy and dark dried fruit note of apples and spices nice full body and well balanced by style beer hint of of and malt mild toasted and roasted mouth feels

Sample at Palace Hall 13/12/2025 Malmö December tasting - (2024 vintage) lingering sweet malty with dried fruit shred, getting the apple coming through, light brown sugar spinkle, medium body, spiced malty finish. Very nice.

Typically I am not enthusiastic about spices in a dark Belgian ale but I look forward to see what The Bruery does with this one. 12.7 oz bottle out of the 2024 edition of 12 Days of Christmas acquired direct from the brewery. The pour is a dark amber-brown body finished by a partial cover of silver-tan foam. A smell gives me plenty of ripe dark fruit, yeast and a touch of spiciness of some kind. I take a drink. Well, this is different but not bad. Dark plums, black raisins, malt and then I am guessing cardamom providing an unusual floral and mint effect to the brew. Curious, not exactly my thing but an appreciated sampling. Tasty in any case.

From tap at BeerTemple, Amsterdam. Aroma is spicy yeast with dark malt, caramel, chocolate, spices, nutmeg, coriander, clove. Sweet and light bitter flavour, body is medium to full. Very tasty yeasty spicy Belgian Strong, spicy in a good way.
