For this Vlier, we macerated elderflowers for one day on elder lambik and let it further mature for almost eleven months on an oak barrel. We used two- and three-year old lambikken only, rendering the weighted average age upon bottling to more than 34 months. On average, for 83% of the lambikken, we used local cereals. The elderflower comes from Mosterdmakerij De Ster. 100% 3 Fonteinen.

Clear orange beer, small creamy yellowish head, a little stable, non adhesive. Aroma: nice, lots of elder flowers, a bit funky, earthy, brett, more funk, a little fruity, nice! MF: soft carbon, medium body. Taste: nice, very fruity, floral, earthy, a bit lemony, spicy touch, peppery, dry. Aftertaste: slightly sweet touch, fruity, lemony, a little bitter, wood notes, lots and lots of elder flowers in the aftertaste, very nice stuff!

Small, lightly yellowish head, stable, over veiled ochre golden beer. Horseblanket, elderflower, spring blossoms, honey, and (!) honeysuckle. Very delicate aromas, as in (professional) fruitwine. Elderberry (!), shoepolish, very light farmyard flavours, gooseberry. Perfumed character, alleviated by the lactid acid and other acids. Acidthinning and -burn, good carbonation. Slowly fading flavours. Not too sharp, good!
