For this two-barrel calvados lambik, we matured three thirty-one-month-old lambikken for a full year on two casks from a small organic cider and calvados producer. About one third of the grain bill used for brewing these lambikken was sourced directly with Pajottenland farmers from of our Cereal Collective. We let them sit in our cellar for another full year almost before its release.

Pours cloudy orange copper with a small head.
Intense sesame, funk, Wood, calvados, Apple and barnyard. Champagne. Both worlds shining. Woody and Lots of calvados. Warming finish. Thanks Peter. S.P.

Pours clear, darker amber. Scent is very full. Intense apple, spiced, oak. Milder lambic funk. Taste is sharp, loads of apples. On the back it had a very woody bite. Medium acidic. Off-dry feeling at first, but turns dryer towards the end

Bottle at Rassia tasting. Hazy golden with white head. Funky, oaky, apples, vanilla. Slightly tart. Drank together with the calvados which enhanced apple notes even more. Subtle almond and stone fruit. Intriguing beer.

Bottle @ BXL Beerfest, second batch. Hazy blond colour, creamy white foam. Complex nose of funk, apples, vanilla, wood. Taste is very well balanced, subtle tartness, woodiness with sweet calvados hints. Great!

75 bouteille @ BXLBeerFest’24 – jour 2. Pourquoi je suis encore étonné que la 3F était dans les plus chers du festival 3 jetons pour juste 8cl ? Bref – bouteille # 0613/1199, bottled 20/12/2023 à 10.2%.
Couleur orangée, col blanc disparate et pas tenace.
Arôme sur un léger bouquet de ‘cask’ avec un léger caractère de pommes laissant un léger effluve de douceur caramélisée (effet Calvados ?), oxydation, funk du lambic laissant des notes acidulées / fruitées, cuire, vieux cellier, terreux – un lambic quoi !
Palais sur le funk avec une belle présence des ‘cask’ de Cognac – effet un peu sulfite/minéral tout en ayant le côté assemblage de lambics donnant sur un fini légèrement acidulé, rustique, cellier avec une fine note d’oxydation. L’alcool est bien là sans pour cela nuire au caractère général de ce lambic – en pensant un peu sur Calvados cela prend plus de sens.
Mahe hapukas, õunane, funky linnaseline. Hea.

Nice bubbly-creamy mediumlasting head, cloudy dark orangy color. Aroma is slightly dry mineraly, oak, fruit stones, minerals, old rope, hay, apple cores, grass, bark, flowers, calvados. Taste is slightly dry sour-ish grassy, sorrel, oak, apple cores, hay, minerals, calvados, apple peel, mild vinegar, flowers, bark, soda powder. Medium to longlasting bitterness, slightly dry sour-ish floral mouthfeel. Nice enough, a bit disappointing really.

Pours cloudy amber. Small to no head. Scent is mild, some apples. Lambic funk. Taste is full, tart. Very funky. Oak is expresive. Towards the back, a lot of apples show. Seemingly spicy as well (spices, not hot) this is more than geuze+apples, this is a culinary highlight beer.

Bottle, 750 ml at Lambikodroom. Shared with MiroB and second time with Fran and kajser27. Almost clear golden with white head. Funky, puckering, some apples, citric, barrel, calvados in the back. Nice soft elegant profile. Medium sourness.
