Barrel-aged Saison with aged whole hops. Inspired by the tradition of Belgian Gueuze, "Past Remembered" is a blend of 1-3 year old barrel stock that held aged hop Saison.
The result is maximum funk and barnyard with a lemon/ citrus zing.
Capitola bred, but with Belgian roots, if you will.

Poured from a 750 ml bottle. Aroma is fairly hop forward with nice citrus notes and pineapple with hints of tropical fruit and herbal notes. Light malt notes with typical SARA funky notes of lemon, green grapes and herbal notes. Faint barrel character and hints of alcohol. Pours a hazy, slightly dull, orangish-peach color with a medium large, thick, pillowy white head that recedes slowly to a small film that lingers. Medium lacing and small legs. Flavor is somewhat acidic with light sweetness and light malt notes. Medium bitterness and light alcohol notes. Light hop notes with herbal notes and hints of citrus and tropical fruit. Faint oak notes and light SARA funk. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a solid dry hopped saison. Perhaps a bit more acidic than I was expecting, but I think it helps compliment the dry hopping. Typical SARA funk and faint oak notes.
