Medium Sweet Lightly Sparkling Fine Cider
A rural method, late season, cider blended around Ashton Brown Jersey that is becoming a regular blend with Sam & Beccy. The varieties selected in this cider also feature Dabinett, Vilberie, Stembridge Clusters & Foxwhelp. These are quality fruits from old orchards, handled carefully and fermented over the depths of winter. Gentle racking off the dormant wild yeasts the cider is left naturally sweet.
Aromas of dried apricot, honey, oily herbs and wood are complemented by well balanced, ripe tannins and residual sugar. Drink lightly chilled with cheese. Alc. 5.8%

750ml bottle pour at Edinburgh Cider Salon, Montrose Restaurant, 01Dec2024. Hazed golden colour, thin white foam rim and aroma of apple, funk. Taste is sweet, ripe apples, fruit, core, funky, with some acidity and dry tannins. Medium bodied, light carbonation, dry fruity funky tannic finish. Nicely drinkable.
