Bourbon Barrel-Aged Imperial Stout with Nuts + Coconut • 14.2% ABV • A river of coconut curls through an inky black underworld guarded by a three-headed sentry of walnuts, almonds, and pistachios.
This Bourbon Barrel-Aged Stout collaboration with Mortalis Brewing showcases the game-changing technique of roasting certain finishing adjuncts onsite. We house-roasted almonds, pistachios, English walnuts, and coconut and immediately applied them to this decadent stout base, capturing all of the rich, delicious nut + coconut oils into the finished liquid.

Bottle pour shared by ClarkVV--thanks Clark! at OT Camp tasting. Opaque, inky black, nice viscosity with ring of head, no lacing. Aroma is strong earthy roasted stout, amalgam of nuts, coconut, mild vanilla. Taste is strong roasted malt, nuts, mild vanilla, coconut and tart fruit(?). Smooth, silky texture, soft carbonation, finish as taste. Not hugely complex but good.

375 ml bottle, 2023 vintage. Thank you Clrakvv. Aroma of walnut, toasted almonds. Flavor shows all the roasted nuts with soft chocolate. Nice flavor. Yet, alcohol shows itself just a touch. A touch sweet. Still a nice drink.

2023 bottle drunk 9/20/25.
Clear and dark. Viscous but a bit of head.
Starts out very earthy and dry but begins to open up almost immediately. Gets rich, nutty, lightly sweet with lightly sweet, mildly spicy bourbon and lingering nut paste. No alcohol noted.
Chocolate, caramel, lots of toffee and vanilla. Very English with big nut paste and sweetness. Spicy bourbon and soft vanilla. Very classic bourbon stout with not too much nuttiness, honestly. Very, very tasteful adjunct. Maybe gets a shade too sweet, but it's rich and lovely with an excellent cherry and vanilla bourbon spice.

Panda courtesy of Theydon_Bois, cheers Colin! Black colour, afew dark brown bubbles on top and aroma of roasted malt, molasses, raisins, bourbon barrel, vanilla, chocolate & coffee, coconut. Taste is sweet, malty, roasty, dark chocolate, brown sugar, dried fruit, wood barrel, bourbon, vanilla, coconut, with booze and nutty bitterness. Full bodied, smooth soft carbonation, drying boozy roasty bitter finish. Very sippable.

Rated at Muted Horn. Sweetish, roasty and heavy with nutty notes, hints of syrup, vanilla, coffee and bourbony oaky notes. Pretty balanced and complex slow sipper
