We've married our traditional saison recipe with Old Tom gin from our friend's at Jenson's distillery to create an incredibly aromatic Belgian Ale. Our house yeast pairs perfectly with Jenson's blend of botanicals, ushering in a refreshing taste of spring.

[ As Brew By Numbers 01 Saison - Old Tom Gin ].
ABV: 5.0%. Light unclear medium to light yellow colour with a large, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, yeast, gin - juniper, coriander - rose pepper, citrus. Flavor is moderate sweet with a average to long duration, wheat, yeast, rose pepper - coriander, citrus - gin - juniper (sichuan peppercorn), medium dry, thin, light botanic - floral. Body is medium, texture is oily to watery, carbonation is soft. [20191110]

Can from the brewery in Bermondsey and drunk at home. Hazy gold colour lasting white head. Pepper saison yeast aroma. Light saison. Do I get much gin or juniper? Not sure. Good saison flavour. Some grape flavour. Light saison light gin presence. Ok. Some pepper bitterness.

Can at home, 19/05/19. Hazed pale orange with a decent white cap that dissipates edgeward in time. Nose is citric tinged straw, botanical notes, herbal edge, lemon rind, straw. Taste comprises lemon curd, stale bread, hay bale, grass, light herb, juniper tickle, yeast esters, light white peppery spice. Medium bodied, fine carbonation, semi drying close. Decent enough clean drinking saison.

Keg at the brewery a light hazed dull golden coloured pour with a fine fading white head. Aroma is light grains, straw, botanical. Wax, grass, some botanical. Flavour is thin grains, herbal notes, wheat, spicy clove, spicy. Palate is little thin, grainy, moderate carbonation. Ok.

Direkt aus dem Taproom in Bermondsey. Optisch leicht trüb, in der Nase Aprikose, ebenso im Trunk, definitiv ein Farmhouse, spritzig, leicht wittig, passt.

Can at home in Hackney - picked up at the brewery. Pours mostly clear gold with a thin, foamy white head. Not bad overall, some damp wheat, pale grains, mild floral notes, lemon peel, a little straw, vague botanicals. Light bodied with fine carbonation. Finishes with more floral hops, light bitter hay, restrained yeast expression, pale biscuits. Drinks fine.
