Inspired by the lambics of Brussels and the Pajottenland, the beer spent time in our coolship before naturally fermenting and maturing in oak barrels for an average of 20 months. We then aged the beer on blueberries (3 pounds per gallon) for 12 weeks. Bottle conditioned for all natural carbonation and matured in bottle for 18 months. Bone dry, bright and refreshingly tart, with a beautiful interplay of berry fruit, oak, earth and citrus.
