Imperial Pastry Stout

Chupacabra is a beautiful thick and oily imperial pastry stout whose base was resting on tonka beans and coconut.

The main story is 140 kilograms of thick sour cherry puree, which we added during the fermentation phase. The idea was to get fine liqueur-like notes of cherry, together with some acid that would balance the sweetness of the base and adjuncts.

It's complex, with prominent aroma and flavors of chocolate, vanilla, almond, coconut and cherry... It's a dark pitch beauty.

0.5 l can shared with PBF_pivica at X Bar, Zagreb. Dark brown to black, diminishing brownish head. Aroma is intense coconut, chocolate biscuit, Nutella, dark cherry and cocoa. Intense, overwhelming, artificial, but the cherry gives it a nice touch. Smooth, juicy, tart, sweet at first, but roasty and tart in the finish. Smooth, medium to full body but not too heavy on the palate. Nice cherry tartness rounds it down a bit. Flavours are cocoa, vanilla, burnt toast, dark chocolate and cherry liqueur. Warming, slightly rough.
