Sauvin is a blend of a rustic saison and longer aged wild ales (3 up to 5 years) dryhopped with Nelson Sauvin hops for over a year in one of our Bourgogne foeders.
In the nose you will come across white wine grapes and melon notes from the Nelson Sauvin hops. Accompanied by dusty, oaky and a citrus aroma’s from the base beer. In taste you will experience a slightly bitterness and herbal notes like thyme from the hops, a balanced sourness with a fairly dry woody finish.

0,75l from bottle at home. Bottled 13.01.2024. BB 13.01.2034. lightly amber hazy color, medium big white head. Smells funky, earthy, citric, herbal, oak, toffee, very nice smell. Full body, soft carbonation. Tastes herbal, earthy, tobacco, sherry, spices, walnuts, light curry, peppery. Finishes lightly dry and lightly sour with notes of oak, walnuts and herbal notes. very nice one, very smooth,

0.75l bottle, huge thx E.S., Valhalla tasting. Oaky, stone fruit aroma, mango, funky white grapes. Smooth, sour taste, strawberries of all things?!?, oak, brett, good sourness, low acetic notes. Almost a bit too much, stays restrained somehow. This is excellent!

Bottle pour at MBCC 2025 (Green session), pours a clear bright orange with a small white head. Aroma has some phenolic notes, rustic wild yeast, and a touch of tangy dry-hopping. Flavour is a little better, with rustic saison yeast, some bugs, and a touch of floral dry-hopping. Not the best yeast profile but reasonably structured.

Bottle pour at MBCC 2025, green session. Pours clear gold with a white head. Spicy, rustic saison yeast, some wood on the nose. Flavour has punchy saison yeast, rustic, dry grass. Very nice.
